Sweet & Zesty Grilled Corn & Avocado Salad for Our Family’s Memorial Day Dinner

My mom is a terrific home cook and has a brand new food blog. It’s called Grandmommy’s Kitchen. Her first recipe is one o our family’s favorites–Sweet & Zesty Grilled Corn & Avocado Salad. Some of you may have seen this recipe on Facebook or other social media.  I got the recipe off Facebook about a year ago, modified it to suit my family and have made it for several family gatherings.  It is best in the spring and summer when fresh corn is available.  The original recipe called for more cilantro, more tomatoes and no onions.  Personally, I don’t think you can combine avocados and tomatoes without adding purple onions, so here goes!

Salad Ingredients

1 cup grape tomatoes sliced in half

1-2 ripe avocados chopped

2 ears fresh corn-on-the-cob, grilled

1/2 cup purple onion, chopped

2 T. fresh cilantro, chopped

Remove husks from corn and grill over medium heat for about 10 minutes, turning often.  Cut the corn off the cob and then scrape the cob with the back of your knife to capture the juices.  Set aside to cool.
